One woman started a sweet company that many look up to.
Tina Rexing, a former professional tennis instructor, started T-Rex Cookie Company about a decade ago.
“It’s kind of overwhelming to be honest,” Rexing said.
Rexing started selling half-pound cookies at the Minneapolis Farmers Market. Now the company has a store and kitchen in Eagan, and they supply cookies across the state and country.
“I just want to thank everyone who followed me along on this journey,” Rexing said.
Over the last decade, several stories have been written about Rexing’s success, with many looking up to her as a role model. It’s a title she doesn’t take lightly.
