The state is taking the old proverb "waste not, want not" to heart with a new statute on the books.
ST PAUL, Minn. — A new state law is going into effect that will allow charitable food assistance programs across Minnesota to distribute donated eggs to people up to 30 days past their quality assurance date.
Gov. Tim Walz signed the Shell Egg Bill (SF3891) into law on May 26, 2026. The legislation, which officially took effect Aug. 1, 2026, aims to help more Minnesota families while reducing food waste statewide.
For eggs, a "best by" or quality assurance date guarantees the egg's grade—typically Grade AA or Grade A—rather than indicating food safety. Eggs past their quality assurance date remain safe to consume, provided they have been handled and stored appropriately.
