It’s the season of fresh produce and what better way to use up that produce than to put everything together in a delicious salsa? Milissa Silva, owner of El Burrito Mercado shows us a few easy recipes.
Grammy’s Fresh Salsa for Fried Taquitos De Papa
Makes about 2 cups
Ingredients
• 4 Roma tomatoes, diced small
• ¼ cup white onion, extra finely diced
• 1 serrano pepper, minced (seeds in for heat)
• ¼ cup fresh cilantro, chopped (optional)
• Squeeze of lime optional
• ½ tsp salt (or to taste)
• Pinch of Mexican oregano, crushed between your fingers
Instructions
1. Use a cheese grater, and grate the tomatoes with the juices
2. Add the onion, serrano, and cilantro. Stir to combine.
3. Season: Add lime, salt, and the crushed oregano. Stir well.
4. Rest for 5–10 minutes at room temperature.
